Fried Sweet Potatoes and Mushrooms with Spinach

So I did a little experimenting in the kitchen this weekend. I made these awesome pork chops and needed something to go along with them. I decided to fry up all the random veggies in my kitchen and see how it came together.

Let me tell you...this was pretty awesome. My husband even said he liked it better than the meat. That`s saying something.

Fried Sweet Potatoes and Mushrooms with Spinach
Time: 20 minutes
Serves 2

1 large sweet potato
8 oz mushrooms, sliced
2 handfuls spinach
3 tablespoons olive oil
salt and pepper to taste

1. Prepare your veggies: peel and slice sweet potato into small, even pieces. Slice mushrooms.
2. Heat 2 tablespoons oil over medium heat. Add sweet potato and salt and pepper. Cook until sweet potato begins to soften and brown, about 10 minutes.
3. Add mushrooms and 1 tablespoon olive oil. You can also add more salt and pepper at this point if desired. Cook until mushrooms begin to soften, about another 5 minutes.
4. When sweet potatoes and mushrooms are cooked to desired softness/carmelyness, add spinach and allow to wilt. Serve and enjoy.
