Monday Recipe: Vegetarian Chili

This is another great one from allrecipes.com.  It's a 'can of everything' soup, made in the slow cooker, so it's super easy.  I love to make a whole batch and freeze some for later. To see the recipe on allrecipes, click here.

Grandma's Slow Cooker Vegetarian Chili
Time: 2 hours
Makes 8 servings

Ingredients
1 can black bean soup (I usually just use black beans)
1 can kidney beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 can vegetarian baked beans (any old baked beans will do if you're not picky)
1 can chopped tomatoes in puree
1 can whole kernel corn, drained
1 onion, chopped
1 green pepper, chopped
2 stalks celery, chopped
2 cloves garlic, chopped
1 tablespoon chili powder
1 tablespoon dried parsley
1 tablespoon dried oregano
1 tablespoon dried basil

Directions

  1. In a slow cooker, combine all ingredients.  Cook on high for at least 2 hours.
