My sister makes delicious pad thai, and I think this is comparable. Not only is it delicious, it's super easy, and super cheap. I've already made it twice this week.
First up, grab your rice noodles and soak them according to package directions.
Chop up some cilantro and peanuts while it soaks.
Mix together some soy sauce, lime juice, and brown sugar for your sauce.
Heat up some olive oil in a skillet, and add some garlic to it. Cook until you can smell that garlicy goodness.
Beat an egg and add it to your garlic.
Cook until it's just set, then add your noodles and the sauce you mixed up earlier.
Cook until the noodles are soft. Put on a fancy plate, garnish with the cilantro and peanuts, and enjoy the fact that you just made yourself some awesome Thai food in less than half an hour.
Easy Pad Thai (adapted from Brownies for Dinner)
Serves 4
8 ounces dried rice noodles
4 tablespoons brown sugar
4 tablespoons fresh lime juice
6 tablespoons soy sauce
2 teaspoons olive oil
1 garlic clove, minced
2 large eggs, light beaten (optional)
1/2 cup fresh cilantro
1/4 cup chopped roasted, salted peanuts

- Soak noodles according to package instructions. Drain.
- In a small bowl, whisk together brown sugar, lime juice, and soy sauce.
- In a large nonstick skillet, heat oil over medium-high heat.
- Add garlic and cook, stirring constantly, until fragrant. Add eggs and cook until eggs are almost set.
- Add noodles, scallion greens, and sauce to skillet. Cook, tossing constantly, until noodles are soft .
- Serve noodles topped with cilantro and peanuts.
