Like everyone else, I love me some good fall food. There's nothing like the smell of baking banana bread on a cool day. I found this recipe a few days ago on allrecipes and made it just a bit healthier by using sucanat and whole wheat flour in place of sugar and all purpose flour. If you use regular white sugar I'd suggest replacing a bit with brown sugar for that nice, warm taste. This is a super easy recipe and I hope you enjoy!
Healthy(er) Banana Bread
Yields 1 8x4 inch loaf
Ingredients:
- 1/4 cup butter, softened
- 1 cup sucanat
- 1 egg
- 3 ripe bananas, mashed
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
1. Preheat oven to 350 degrees, lightly grease your bread pan.
2. In a large bowl, cream together butter and sucanat. Beat in the egg and mashed bananas. Mix in flour, baking soda, and salt until just combined. Pour into prepared loaf pan.
3. Bake in preheated oven for one hour. Center should be soft and chewy, while outside is crisp and crunchy.
