Monday Recipe: Ham and Potato Soup

I am a huge lover of soup.  I'd eat it every day if I could.  I made this one for the first time last week, and it was SO GOOD!  There's a reason it has a full 5 stars on allrecipes.com.  It's not too hard to make either.

Delicious Ham and Potato Soup
Time: 45 minutes
Servings: 8

Source

Ingredients
3 1/2 cups diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced, cooked ham (I used bacon in mine cause I didn't have ham)
3 1/4 cups water
3 tbs chicken bouillon granules
1/2 tsp salt
1 tsp ground black pepper
5 tbs butter
5 tbs all-purpose flour
2 cups milk

Directions

  1. Combine the potatoes, celery, onion, ham, and water in stockpot. Bring to a boil, then cook until the potatoes are tender, about 15 minutes. Stir in the bouillon, salt, and pepper.
  2. In another saucepan, melt butter over medium-low heat.  Whisk in flour with a fork, stirring constantly until thick, about 1 minute.  Slowly stir in milk as not to allow lumps to form until all of the milk has been added.  Continue to stir over medium-low heat until thick, about 4-5 minutes.  (Mine never really thickened up that much until I added it to the soup.)
  3. Stir the milk mixture into stockpot and cook until heated through.  Enjoy!
Has anyone had a chance to make anything I've posted? Please let me know how you liked it! :)
