Monday Recipe: Autumn Turkey Tenderloins

I never really cooked much before I got married.  That was my mom's job.  But since my mom doesn't live with us, I've had to take over that duty in our home.  And I've discovered that I actually like it.  Just a week or so after the wedding, I discovered Allrecipes.com and signed up for their daily newsletter.  I've found many great recipes that way, and still look forward to reading through it every day.


This week's recipe is from my Taste of Home cookbook.  I made it on Thanksgiving; it's super easy and tastes amazing.  It's also pretty low carb, which is always good for a diabetic like me!


Autumn Turkey Tenderlions
Time: 30 mins
Makes 5 servings



Ingredients

  • 1-1/4 pounds turkey breast tenderloins
  • 1 tablespoon butter
  • 1 cup unsweetened apple juice (I've used cider too)
  • 1 medium apple, sliced
  • 1 tablespoon brown sugar
  • 2 teaspoons chicken bouillon granules
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1/2 cup chopped walnuts, toasted
DIRECTIONS
  1. In a large skillet, brown turkey in butter.  All the apple juice, apple, brown sugar, bouillon, cinnamon, and nutmeg.  Bring to a boil.  Cover and cook for 10-12 minutes (the apples will be soft and turkey no longer pink).
  2. Using a slotted spoon, move turkey and apples to plate; keep warm.
  3. Combine cornstarch and water until smooth, add to pan juices.  Bring to a boil and stir for 2 minutes or until thickened.  Pour over turkey and apple, sprinkle with walnuts.
  4. Enjoy. :)
